INGREDIENTS:
- 1 medium red onion, sliced into very thin rings
- Hot water
- ¾ cup red wine vinegar
- ¼ cup water
- 2 tablespoons packed brown sugar
- 1 fresh jalapeño or serrano chile, seeded and thinly sliced (optional)
- 1 teaspoon black peppercorns
INSTRUCTIONS:
- Place the onion rings in a medium-size bowl. Pour in enough hot water to cover them by about 1 inch. Let the onion rings stand for 15 minutes, then pour off and discard the water.
- In a small saucepan over medium-high heat, combine the red wine vinegar, water, brown sugar, chile (if using), and black peppercorns. Bring the mixture just to a boil.
- Pour the hot liquid over the onion rings in the bowl and stir to combine. Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld.
