  • 2 (15-ounce) cans pinto beans, rinsed
  • 1 cup water, plus extra as needed
  • 1 tablespoon vegetable oil

  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • ½ teaspoon chipotle chile powder
  • ½ teaspoon dried oregano
  • 1 tablespoon minced fresh cilantro
  • 2 teaspoons lime juice
  • Salt and pepper

 

INSTRUCTIONS:

  1. Process all but 1 cup of beans and water in a food processor until smooth, approximately 30 seconds, scraping down the sides of the bowl as needed. Add the remaining beans and pulse until coarsely ground, about 5 pulses.
  2. Heat oil in a 12-inch nonstick skillet over medium heat until shimmering. Add chopped onion and ½ teaspoon salt, and cook until the onion is softened, around 5 minutes. Stir in tomato paste, minced garlic, ground cumin, chipotle chile powder, and dried oregano, cooking until fragrant, about 1 minute.
  3. Stir in the bean mixture and cook, stirring constantly, until well combined and slightly thickened, about 3 minutes.
  4. Off heat, stir in minced cilantro and lime juice, and season with salt and pepper to taste. Adjust the consistency with additional hot water if needed.
