  • 1 1/2 cups fruity red wine
  • Several sprigs fresh thyme or 1 teaspoon dried thyme
  • Salt and freshly ground black pepper
  • 4 large Real Croutons or plain Crostini (optional)
  • Chopped fresh parsley leaves for garnish (optional)

 

INSTRUCTIONS:

  1. In a large skillet or Dutch oven with a lid, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Add the crushed garlic to the skillet and cook, stirring, until lightly browned, which typically takes about a minute. Add the cleaned squid to the skillet, stirring to coat them with the aromatic garlic oil. Lower the heat to medium and pour in the fruity red wine. Stir in the fresh thyme or dried thyme and cover the skillet.
  2. Allow the squid to simmer gently in the red wine until it becomes tender, approximately 45 minutes. If desired, you can let the dish sit, covered, for an additional hour or two before proceeding with the next step.
  3. Once the squid is tender, uncover the skillet and season the dish with salt and freshly ground black pepper to taste. Increase the heat and cook until most, but not all, of the liquid has evaporated, which typically takes about 5 minutes. Stir in the remaining tablespoon of extra virgin olive oil, thoroughly coating the squid with the flavorful sauce.
  4. If using, place the large Real Croutons or plain Crostini on serving plates. Spoon the slow-simmered squid mixture over the croutons for added texture and taste. Optionally, garnish the dish with chopped fresh parsley leaves to bring a touch of freshness and color.
