MAKES ½ cup

INGREDIENTS:

  • 3 tbsp ground coriander
  • 2 tbsp ground cumin
  • 2 tsp cinnamon
  • 1 tsp ground cardamom
  • ½ tsp ground ginger
  • ½ tsp each salt and pepper

DIRECTIONS:

  1. Stir together coriander, cumin, cinnamon, cardamom, ginger, salt and pepper.
  2. To use, see Using Rubs, opposite.
  3. (Make-ahead: Store in airtight container for up to 3 months.)
