MAKES 1¼ cups

INGREDIENTS:

  • 1 tbsp butter
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • 2 cups mixed sliced exotic mushrooms (cremini, shiitake and oyster)
  • ½ cup dry white wine
  • ½ cup whipping cream (35%)
  • pinch each salt and pepper
  • 1 tbsp chopped fresh parsley

DIRECTIONS:

  1. In a skillet, melt the butter over medium heat.
  2. Add the shallot and cook until softened, about 2 minutes.
  3. Add the garlic and cook for 1 minute.
  4. Add the mushrooms and cook over medium-high heat until softened and no liquid remains, about 5 minutes.
  5. Add the wine, reduce heat and simmer for 4 minutes.
  6. Add the cream, salt and pepper, and simmer until thick enough to coat the back of a spoon, about 2 minutes.
  7. Stir in the parsley.
