YIELD: Makes about 6 dozen crackers 

 

INGREDIENTS:

  • 8 ounces cheddar, coarsely grated
  • 2 ounces Asiago or Romano, finely grated
  • 2 ounces Parmesan, finely grated
  • 1½ cups all-purpose flour
  • ½ teaspoon dry mustard
  • ½ teaspoon kosher salt
  • ⅛–¼ teaspoon cayenne pepper
  • 1–2 teaspoons fresh thyme, chives, rosemary, finely chopped (optional)
  • 8 tablespoons (1 stick) unsalted butter, cut into small pieces
  • 4 tablespoons water, plus more if needed

 

INSTRUCTIONS:

  1. Cut the cold butter into the flour until you have pea-sized pieces.
  2. Add the salt, dry mustard, and grated cheeses to the mixture and blend well.
  3. Create a well in the center of the dough and pour the water into it.
  4. Cut the dough into the water, then use the heel of your hand to smear and combine the ingredients thoroughly.
  5. Gather the dough and divide it into two 10-inch logs, rolling firmly to avoid air spaces in the crackers.
  6. Wrap each log in wax paper or plastic wrap and refrigerate for at least 2 hours. If you plan to freeze the dough, add another layer of wrap to preserve its freshness.
  7. Note: Chilling the dough is essential as it helps maintain the crackers’ round shape during slicing.
  8. Preheat your oven to 375°F (190°C) when you’re ready to bake the crackers.
  9. Slice the chilled dough logs into ¼-inch thick rounds and place them on a parchment-lined baking sheet.
  10. Bake the crackers for 8 to 10 minutes or until they turn a light golden color.
  11. Use a spatula to carefully flip the crackers and bake for an additional 3 to 5 minutes until the edges begin to brown slightly.
  12. Allow the baked crackers to cool to room temperature before serving.
  13. Serve the crispy, cheesy delights at room temperature and enjoy their irresistible flavor.
  14. Store any leftover baked crackers in an airtight container to maintain their freshness.
