TIME: 30 minutes

 

INGREDIENTS:

  • 4 large soft-shell crabs, about 1 pound each (or more smaller ones) or 4 lobsters, about 1 1/2 pounds each
  • Salt and freshly ground black pepper
  • Lemon quarters and/or melted butter for serving

 

INSTRUCTIONS:

  1. Heat a charcoal or gas grill or the broiler until moderately hot, positioning the rack at least 4 inches from the heat source.
  2. Follow the instructions on page 610 to kill the crabs or the illustrations on page 611 to prepare the lobsters.
  3. For lobsters, cut them in half and remove the head sac. Optionally, you can leave the coral and tomalley in the body or reserve them for sauces.
  4. Grill or broil the soft-shell crabs for 3 to 4 minutes per side, turning once. They should be firm to the touch when done.
  5. For lobsters, grill or broil them for about 5 minutes on each side, starting with the cut side up. Sprinkle with salt and pepper before turning. The lobster meat should be firm and opaque when done.
  6. Serve the grilled soft-shell crabs or lobsters with lemon quarters and/or melted butter.

 

NOTES:

If you choose to grill lobsters, remember to split them and remove the inedible parts for a hassle-free and enjoyable grilling experience.
