INGREDIENTS:
- 2 (20-oz [567-g]) cans young jackfruit in brine
- 1 tbsp (15 ml) olive oil
- ½ medium-sized white onion, chopped (about ½ cup [80 g])
- 1¾ cups (420 ml) vegan BBQ sauce
- 1 batch Coleslaw (soy-free if needed)
- 12 to 16 vegan slider buns (gluten-free if needed)
INSTRUCTIONS:
- Drain and rinse the jackfruit and squeeze out as much water as possible, using a cheesecloth or clean towel. Chop it into small pieces and set aside.
- In a large skillet, heat the olive oil over medium-low heat. Stir in the onion and cook, stirring occasionally, for 5 to 7 minutes, or until translucent.
- Stir in the chopped jackfruit and cook, stirring often, for about 5 minutes.
- Add the BBQ sauce to the skillet and continue cooking, stirring often, for another 10 minutes.
- Assemble the sliders by placing equal amounts of the jackfruit mixture and coleslaw in each bun.
