INGREDIENTS:

  • 6 ounces dry spiral pasta
  • 4 tablespoons butter
  • 1 tablespoon minced onion
  • ¼ cup flour
  • 2 cups milk
  • 1 cup Velveeta cheese
  • 1 teaspoon salt
  • Dash of pepper
  • ¼ teaspoon dry mustard

 

INSTRUCTIONS:

  1. Preheat the oven to 400°F (200°C).
  2. Cook the spiral pasta according to the package instructions. Drain the cooked pasta and set it aside.
  3. In a saucepan over medium heat, melt the butter. Add the minced onion and sauté until softened, about 1-2 minutes.
  4. Stir in the flour and cook for about 5 minutes or until the mixture thickens and becomes a roux.
  5. Slowly pour in the milk while continuously stirring to avoid lumps. Keep stirring until the sauce thickens and becomes smooth.
  6. Add the Velveeta cheese to the sauce, stirring until it’s fully melted and the sauce is creamy.
  7. Season the cheese sauce with salt, a dash of pepper, and the dry mustard, mixing well to incorporate the flavors.
  8. Once the cheese sauce is ready, add the cooked pasta into the sauce and toss it until all the pasta is coated evenly.
  9. Lightly butter a casserole dish to prevent sticking, then transfer the pasta mixture into the dish.
  10. Bake the casserole in the preheated oven for about 20 minutes or until the top is bubbly and slightly golden.
  11. Remove the casserole from the oven and let it cool slightly before serving.
