INGREDIENTS:

  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • ½ cup vegetable oil
  • ¾ pound diced seasoned chicken
  • 1/3 cup diced onion
  • ¼ cup diced red bell pepper
  • ½ cup diced chayote squash
  • 8 pieces whole dry chili pepper
  • ½ teaspoon crushed garlic
  • ½ teaspoon crushed ginger
  • ¼ cup roasted peanuts
  • ¾ teaspoon crushed red chili pepper
  • ½ teaspoon cooking wine
  • 1 teaspoon soy sauce
  • 2 tablespoons chicken broth
  • 1 teaspoon granulated sugar
  • 1 dash sesame oil

 

INSTRUCTIONS:

  1. In a small bowl, mix the cornstarch and water to make a cornstarch slurry. Set aside.
  2. Heat a pot of boiling water and cook the chayote squash for about 1 minute until crisp. Remove and drain.
  3. Heat ¼ cup of vegetable oil in a wok or frying pan until hot. Add the diced chicken and stir-fry for about 5 minutes or until cooked through.
  4. Add the diced onion and red bell pepper to the wok and stir-fry for about 2-3 minutes until crisp. Remove the chicken, onion, and bell pepper from the wok and set aside.
  5. In the same wok, heat 2 tablespoons of vegetable oil. Add the whole dry chili peppers, crushed garlic, and crushed ginger. Stir-fry for about 2-3 minutes until fragrant.
  6. Add the roasted peanuts, crushed red chili pepper, cooking wine, soy sauce, chicken broth, granulated sugar, and a dash of sesame oil to the wok. Bring the mixture to a boil.
  7. Slowly stir in the cornstarch slurry, stirring continuously until the sauce thickens.
  8. Add the cooked chicken, diced onion, diced red bell pepper, and cooked chayote squash back to the wok. Coat everything evenly with the sauce.
  9. Stir-fry for another minute or until everything is heated through.
  10. Serve hot with steamed rice.
