Caramel sauce is a versatile treat that serves as the foundation for various culinary creations. Whether used as a candy coating, a sauce, or a frosting, its uses are abundant. However, caution must be exercised while working with caramel, as the mixture can become extremely hot and cause burns. It’s important to wait until the sauce has cooled before indulging in its deliciousness. With just a few ingredients and some simple steps, you can create caramel sauces of different textures and flavors to enhance your desserts and beverages.

Makes: About 1 1/2 cups

Time: 20 minutes

INGREDIENTS:

  • 2 cups sugar
  • Pinch of salt
  • Water (amount varies depending on the sauce variation)

INSTRUCTIONS:

  1. Combine the sugar and salt with 1 cup of water in a broad saucepan or deep skillet over medium-low heat.
  2. Cook the mixture without stirring, but gently swirl the pan, until the sugar dissolves, about 3 to 5 minutes.
  3. The mixture will bubble and gradually darken. Continue cooking until it reaches a caramel color and measures 245°F on a candy thermometer. To test the consistency without a thermometer, drop a small piece into a glass of cold water. It should form a firm ball.
  4. Carefully pour or drizzle the caramel over your desired items for a crunchy candy coating. Alternatively, drizzle it onto wax paper to create decorative garnishes, or proceed with one of the sauce variations below.

VARIATIONS:

Clear Caramel Sauce:

  • After Step 2, carefully add 1/4 cup of water (be cautious as it will bubble up) and stir until incorporated. Add more water to reach the desired consistency.

Creamy Caramel Sauce:

  • Substitute cream (preferably not ultra-pasteurized) for the water.
  • Add 2 tablespoons of unsalted butter and 1 teaspoon of vanilla extract, if desired.
  • Proceed with the recipe, adding the vanilla after Step 2.
  • Add more cream if the sauce is too thick.

Boozy Caramel Sauce:

  • Use the Creamy Caramel Sauce variation.
  • After Step 2, add 2 or 3 tablespoons of liqueur of your choice.

Caramel Coffee Sauce:

  • Substitute freshly brewed coffee or a mixture of half coffee and half cream for the water in the original recipe.

Caramel Frosting:

  • Make the Clear Caramel Sauce variation.
  • Allow it to cool completely.
  • Add 1 pound of softened cream cheese.
  • Whip the cream cheese until fluffy and gradually drizzle in the caramel until thoroughly mixed.
  • Thin the frosting with a little milk or cream if needed.

With these variations, you can explore a range of flavors and textures to elevate your desserts, beverages, and even use the caramel as a decorative element. Enjoy the rich and luscious taste of homemade caramel sauces in your favorite recipes!

TIPS:

  • Before starting, ensure that your saucepan or skillet is clean and dry. Any residue or moisture can affect the caramelization process.
  • When cooking the sugar mixture, use medium-low heat to prevent the caramel from burning or crystallizing. Stirring is not necessary, but gently swirling the pan can help distribute the heat evenly.
  • Caramel reaches extremely high temperatures and can cause severe burns. Exercise caution throughout the process and avoid touching the hot caramel or utensils used to stir it until it has cooled down completely.
  • If you don’t have a candy thermometer, perform the cold water test. Drop a small amount of caramel mixture into a glass of cold water. It should form a firm ball that holds its shape when pressed between your fingers.
