INGREDIENTS:

  • 1½ cups warm water
  • 1⅛ teaspoons active dry yeast
  • 2 tablespoons brown sugar
  • 1⅛ teaspoons salt
  • 1 cup bread flour
  • 3 cups regular flour
  • 2 cups warm water
  • 2 tablespoons baking soda
  • Coarse salt, to taste
  • 4 tablespoons melted butter

 

INSTRUCTIONS:

  1. Preheat the oven to 400°F.
  2. In a mixing bowl, add warm water and sprinkle the yeast over it. Stir to dissolve the yeast.
  3. Add brown sugar and salt to the yeast mixture. Stir until dissolved.
  4. Add the bread flour and regular flour to the mixture. Knead the dough until it becomes smooth and elastic.
  5. Allow the dough to rise for at least 30 minutes.
  6. While the dough is rising, prepare a baking soda water bath by combining 2 cups of warm water with 2 tablespoons of baking soda in a bowl. Stir well.
  7. Once the dough has risen, pinch off small portions of dough and roll them into long ropes, about ½ inch thick. Shape the dough into pretzels.
  8. Dip each pretzel in the baking soda water bath and place them on a greased baking sheet. Let the pretzels rise again. Sprinkle them with coarse salt.
  9. Bake the pretzels in the preheated oven for approximately 10 minutes, or until they turn golden brown.
  10. Remove the pretzels from the oven and brush them with melted butter.
