INGREDIENTS:

  • 4 teaspoons olive oil
  • 2 pounds chicken legs
  • 2 large brown onions, halved and sliced
  • 4 ounces celery sticks, trimmed and cut
  • 3 garlic cloves, crushed
  • 2 cups button mushrooms, thickly sliced
  • 2 cans diced Italian tomatoes
  • 2 ounces chicken stock cube
  • 1 cup frozen broad beans
  • 2 tablespoons fresh thyme leaves

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Heat the olive oil in a non-stick frying pan over medium heat.
  3. Add the chicken legs to the pan and cook for approximately 5 minutes, until they are slightly browned on all sides.
  4. Transfer the chicken legs to a casserole dish.
  5. In the same frying pan, add the sliced onions and celery. Cook for about 5 minutes, until they start to soften.
