Pork Stuffed Chicken Breast Recipe

INGREDIENTS:

  • 6-8 chicken breasts, approximately 2 pounds
  • 1 pound ground pork
  • 1 cup finely chopped shallots
  • 1/3 cup chopped parsley
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon celery salt (or to taste)
  • 1/3 teaspoon allspice powder
  • 1 pound bacon

 

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Heat oil in a skillet and sauté the ground pork along with the chopped parsley, shallots, and half of the allspice mixture. Cook for about 5 minutes until the pork is slightly pink in color.
  3. Butterfly the chicken breast pieces lengthwise using a knife.
  4. Open up the breast pieces and gently pound the chicken with a meat tenderizer to flatten them slightly.
  5. Rub the remaining allspice mixture over the chicken pieces.
  6. Place a generous amount of the pork mixture on one side of each chicken breast and fold the other side over the top to create a stuffed pocket.
  7. Wrap bacon slices tightly around each stuffed chicken breast, securing the filling.
  8. For added stability, you can use toothpicks to hold the bacon in place.
  9. Place the stuffed and wrapped chicken breasts in a baking dish.
  10. Bake in the preheated oven for 25 minutes, allowing the flavors to meld and the chicken to cook through.
  11. Just before serving, turn on the broiler and broil the chicken for about 2-4 minutes to crisp up the bacon.
  12. Once the bacon is crispy and the chicken is cooked, remove it from the oven.
