Smoked Salmon Pate with Cucumber

INGREDIENTS:

  • 4.5 oz of smoked salmon
  • 5.5 oz cream cheese
  • 1/4 cup of heavy cream
  • 1 Tbsp. lemon juice
  • 1 Tbsp. fresh chives
  • Pinch of salt
  • Pinch of pepper
  • 2 Cucumbers

 

INSTRUCTIONS:

  1. Using a vegetable peeler or small knife, cut strips down the skin of the cucumbers. Then, slice the cucumbers into 2-inch thick slices.
  2. Using a melon baller or teaspoon, scoop out the flesh from the middle of each cucumber slice, leaving a small layer at the bottom to create cucumber cups.
  3. In a food processor, add 3/4 of the smoked salmon, cream cheese, heavy cream, lemon juice, salt, pepper, and fresh chives. Process the mixture for a couple of minutes until it becomes a smooth pâté.
  4. Chop the remaining 1/4 of the smoked salmon into small pieces and add them to the pâté. This will give the pâté some added texture.
  5. Fill each cucumber cup with a dollop of the salmon pâté mixture.
  6. Serve the smoked salmon cucumber cups immediately as an appetizer, or you can store them in an airtight container in the refrigerator for up to 2 days.
