INGREDIENTS:
- 5–6 medium (8–10 inches) zucchini
- 1½–3 teaspoons unrefined sea salt
INSTRUCTIONS:
- Rinse the zucchini in cold water and shred them using a food processor or a mandoline. Transfer the shredded zucchini to a large bowl.
- Add 1½ teaspoons of salt to the shredded zucchini and massage it into the zucchini with your hands. Taste the mixture and adjust the salt as needed. Keep in mind that this kraut requires a slightly saltier taste, similar to a salty potato chip. The brine will develop immediately once the salt is added.
- Transfer a few handfuls of the shredded zucchini at a time to a jar or crock, pressing down with your fist or a tamper to remove any air pockets. You should see some brine on top of the zucchini when you press it. Leave 4 inches of headspace for a crock or 2 to 3 inches for a jar.
- Top the kraut with a primary follower, such as plastic wrap, ensuring it covers as much of the zucchini as possible. For a crock, place a plate that fits the opening of the container on top and weight it down with a sealed water-filled jar. For a jar, use a sealed water-filled jar or a ziplock bag as a follower-weight combination.
- Set the jar or crock aside on a baking sheet in a cool location, away from direct sunlight, for 3 to 7 days. Check daily to ensure that the zucchini remains submerged in the brine, pressing down as needed to bring the brine back to the surface. There may be some harmless scum on top, but refer to the appendix if you have concerns.
- After 3 days, check the kraut. It should be soft and possess a lemony acidic quality in terms of sourness when it’s ready.
- Store the kraut in jars, tightening the lids, and minimizing headroom as much as possible. Ensure that the ferment is packed tightly under the brine. This delicate zucchini kraut will keep refrigerated for up to 2 months.
