Serves 4

INGREDIENTS:

  • 1 cup dried cannellini beans
  • 8 cups water
  • 1/4 cup butter or vegan margarine, such as Earth Balance
  • 2 cloves garlic, minced
  • 1 cup milk or unsweetened soymilk
  • 1 teaspoon lemon juice
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper

INSTRUCTIONS:

  1. Begin by adding the dried cannellini beans and 4 cups of water to your pressure cooker. Lock the lid into place and bring it to high pressure for 1 minute. Afterward, remove the pressure cooker from heat and perform a quick pressure release. Drain the cooked beans and set them aside.
  2. Clean the pressure cooker, then add the butter or vegan margarine. Sauté the minced garlic for about 2 minutes, stirring continuously until it becomes fragrant.
  3. Add the drained cannellini beans and the remaining 4 cups of water to the pressure cooker.
  4. Lock the lid into place again and bring it to high pressure. Maintain this high pressure for 15 minutes, then perform a quick pressure release.
  5. Pour the cooked beans into a blender or food processor in batches and purée until smooth. The mixture will be thick.
  6. Return the purée to the pressure cooker over low heat. Slowly stir in the milk or soymilk until you reach your desired consistency. Add lemon juice, salt, and pepper, and heat until the sauce is warm.
