Granita can be made in a shallow pan in your freezer, as instructed below, but you can also use an ice cream maker. It will have a smoother texture, more like sorbet, but it will still taste great.
SERVES: 6 to 8
INGREDIENTS:
- 6 cups seedless watermelon chunks
- 2 tablespoons fresh lemon juice
- ½ cup sugar
- ½ cup warm water
- 8 small wedges of watermelon and mint sprigs for garnish (optional)
INSTRUCTIONS:
- In a food processor or blender, puree the seedless watermelon chunks until smooth.
- Pour the puree into a bowl and stir in the fresh lemon juice.
- In a small bowl, stir together the sugar and warm water until the sugar is dissolved.
- Add the sugar syrup to taste to the pureed watermelon mixture.
- Pour the mixture into a shallow pan and freeze for 2 hours, or until ice crystals form around the edges.
- Scrape the frozen portion into the center of the pan and freeze for an additional 30 minutes. Stir again.
- Continue freezing and stirring every 30 minutes until the granita is completely frozen, about 2½ hours.
- Let the granita stand at room temperature briefly to soften slightly before serving.
- Optional: Garnish with small wedges of watermelon and mint sprigs.
