INGREDIENTS:

  • 2 tablespoons minced fresh parsley
  • 1 teaspoon grated lemon zest plus 2 tablespoons juice
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 3 tablespoons extra-virgin olive oil
  • 2 carrots, peeled and shredded
  • 4 radishes, trimmed, halved, and sliced thin
  • 4 pieces lavash bread
  • 1⅓ cups plain hummus
  • 2 tomatoes, cored and sliced thin
  • 2 avocados, halved, pitted, and sliced thin
  • 4 ounces alfalfa sprouts

 

INSTRUCTIONS:

  1. MAKE THE LEMON-PARSLEY DRESSING: In a bowl, whisk together minced parsley, grated lemon zest and juice, salt, and pepper. While whisking constantly, slowly drizzle in the extra-virgin olive oil until the dressing is emulsified. Add the shredded carrots and sliced radishes to the bowl and toss them in the dressing until well coated.
  2. PREPARE THE LAVASH BREAD: Lay the lavash bread on a clean counter or cutting board. Spread approximately ⅓ cup of plain hummus over each piece of lavash, ensuring an even layer.
  3. ASSEMBLE THE WRAPS: Divide the sliced tomatoes, avocado slices, and alfalfa sprouts evenly among the lavash pieces. Then, add the dressed carrot and radish mixture to each lavash.
  4. ROLL INTO WRAPS: To assemble the wraps, fold the sides of the lavash over the filling. Then, fold the bottom of the lavash over the sides and filling. Finally, roll the lavash tightly into a wrap to secure the ingredients.
