- 1 leek, thickly sliced

- 2 celery ribs, thickly sliced

- 21/2 oz (75g) button or cremini mushrooms, quartered
- 1 medium potato, thickly sliced
- 1 tomato, quartered
- 3 parsley stems
- 2 bay leaves
- 4 sprigs of thyme
- 11/2 quarts (1.5 liters) cold water
INSTRUCTIONS:
- Put all the ingredients, including the leek, carrot, celery, onion, mushrooms, potato, tomato, parsley stems, bay leaves, and thyme, into a large pot.
- Bring the mixture to a boil over high heat. Once it reaches a boil, reduce the heat to low.
- Cover the pot with a lid and let the mixture simmer very gently for 30 minutes. This slow simmer allows the flavors to meld together and create a well-rounded stock.
- Strain the stock through a fine sieve into a separate container. Press the vegetables and herbs against the sides of the sieve to extract all the liquid and flavor.
- Allow the strained stock to cool completely.
