Vanilla and Blueberry Muffins

SERVES: 12.

INGREDIENTS:

  • 1½ cups Ensure® Vanilla powder
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 cup sugar
  • 1 cup natural yoghurt
  • 1 egg
  • ½ cup full cream milk
  • ½ cup vegetable oil

 

INSTRUCTIONS:

  1. Preheat oven to 200°C.
  2. Grease 12 muffin cups.
  3. Combine flour, sugar, Ensure® Vanilla powder and baking powder in a large mixing bowl.
  4. Whisk egg, yoghurt, milk, and vegetable oil in another bowl until smooth.
  5. Pour wet ingredients mixture into the dry mixture and stir until the batter is just blended.
  6. Fill prepared muffin cups 3/4 full.
  7. Bake in oven for 15-20 minutes.
  8. Remove from tray and allow to cool on wire rack.
