INGREDIENTS:

  • Olive oil, as needed
  • ½ cup chopped red bell pepper
  • ½ cup chopped yellow onion
  • 2 garlic cloves, finely chopped
  • 1 cup cooked white rice (leftover rice works well)
  • 1 pound ground turkey
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1½ tablespoons hot sauce
  • 2 tablespoons chopped fresh cilantro
  • 2½ teaspoons ground cumin
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 6 hamburger buns

 

PREPARATIONS:

  1. Prepare a medium-high fire in a charcoal or gas grill.
  2. Heat a little oil in a skillet and sauté the chopped red bell pepper and yellow onion until soft, for about 10 minutes. Add the finely chopped garlic and cook for another minute. Transfer the pepper and onion mixture to a bowl.
  3. In the same bowl, combine the sautéed pepper and onion mixture with the cooked white rice, ground turkey, pinto beans, hot sauce, chopped fresh cilantro, ground cumin, dried thyme, salt, and freshly ground black pepper. Mix everything together until well combined.
  4. Form the mixture into 6 burger patties.
  5. Brush the grill rack with olive oil to prevent sticking. Grill the burgers for 7 to 8 minutes per side or until cooked through.
  6. Serve the turkey bean burgers on hamburger buns.

 

SPECIAL INSTRUCTIONS:

  • Make sure the ground turkey is cooked through and reaches an internal temperature of 165°F (74°C) for safe consumption.
