INGREDIENTS:
- 6 ounces tomatillos, finely diced
- 1 red-ripe plum tomato, finely diced
- ½ cup peeled, seeded, and finely diced cucumber
- ¼ cup finely diced onion
- 1 or 2 jalapeño or serrano chiles, seeded and minced
- 2 tablespoons minced fresh cilantro
- 1 tablespoon fresh lime juice
- 2 teaspoons vegetable oil or sunflower oil
- ½ teaspoon kosher salt or coarse sea salt, or more to taste
INSTRUCTIONS:
- In a bowl, combine the finely diced tomatillos, plum tomato, cucumber, onion, minced chiles, minced cilantro, lime juice, and vegetable oil.
- Gently toss all the ingredients together until well mixed.
- Refrigerate the salsa for at least 15 minutes, allowing the flavors to meld. For even better results, refrigerate for 1 hour to enhance the flavors.
