MAKES: ABOUT 3 CUPS

 

INGREDIENTS:

  • ½ cup cumin seeds
  • 2 tablespoons coriander seeds
  • 2 tablespoons yellow mustard seeds
  • 2 tablespoons black peppercorns
  • 1 tablespoon caraway seeds
  • 1 cup packed brown sugar
  • ½ cup kosher salt or coarse sea salt
  • 2 tablespoons granulated garlic
  • 2 tablespoons granulated onion
  • 2 tablespoons curry powder
  • 1 tablespoon granulated sugar
  • 1 tablespoon crumbled dried sage
  • 1 tablespoon crumbled dried thyme
  • 1½ teaspoons ground cayenne pepper

 

INSTRUCTIONS:

  1. Toast and Prepare Seeds: In a medium-size dry skillet, toast the cumin, coriander, mustard seeds, and peppercorns over high heat. As they release their aromatic essence and start to pop, after about 5 minutes, transfer the toasted seeds to a small bowl and set them aside to cool.
  2. Create the Spice Blend: In a large bowl, combine the remaining ingredients. After the toasted spices have cooled, grind them to a medium-fine coarseness using a spice grinder. If needed, grind them in batches to ensure consistency. Alternatively, you can use a mortar and pestle for grinding. Blend the ground toasted spices into the large bowl of the remaining ingredients. Gently rub the mixture between your palms to break up any clumps and evenly distribute the flavors.
  3. Apply and Marinate: Massage the Cabrito and Lamb Spice blend onto cabrito or lamb cuts. Allow the meat to sit for at least 30 minutes at room temperature. For larger cuts, consider marinating for an extended period, even up to overnight. Wrap or cover the meat and refrigerate for optimal flavor infusion.
