INGREDIENTS:

  • 500 grams of gram flour
  • 1 liter of milk or milk alternative
  • 750 grams of ghee (clarified butter)
  • 750 grams of sugar
  • 3 cups of water
  • 5-10 drops of orange food color (optional)
  • 10 to 12 saffron flakes, soaked in milk
  • 50 cashews, sliced
  • Raisins (as per your preference)
  • 12 cardamom pods, powdered

 

INSTRUCTIONS:

Prepare the Boondi:

  1. Create a thin batter by mixing gram flour with either water or milk. Ensure that the batter is smooth and without any lumps.
  2. Heat the ghee in a deep pan or kadhai over medium heat.
  3. Hold a perforated spoon or strainer over the hot ghee and pour a small quantity of batter onto it.
  4. Tap the strainer gently against the side of the pan to let small drops of batter fall into the ghee. These will form tiny, round boondis. Repeat this process until you’ve used up half of the batter.
  5. Fry the boondis until they turn a golden shade. Make sure to fry them evenly by gently stirring the batter while frying. Once fried, remove the boondis from the ghee and set them aside.

 

Prepare the Sugar Syrup:

  1. In a separate pan, combine the sugar and water to make sugar syrup.
  2. Heat the mixture and bring it to a boil.
  3. Cook the syrup until it reaches a one-and-a-half-thread consistency. This consistency is crucial for the laddus to bind together properly.
  4. Once you achieve the desired consistency, add the saffron-soaked milk and orange food color (if using) to the syrup. Stir well.

 

Mix the Ingredients:

  1. Add the fried boondis, cardamom powder, sliced cashews, raisins, and half of the soaked saffron flakes to the sugar syrup.
  2. Mix everything gently and thoroughly, ensuring that the boondis are well coated with the syrup and the flavors are evenly distributed.
  3. Cover the mixture and let it rest for about 1 ½ hours. This allows the boondis to absorb the flavors and become softer.

 

Shape the Laddus:

  1. After the resting period, dampen your hands with a little water to prevent sticking.
  2. Take a small portion of the mixture and shape it into round spheres using your palms. Repeat this process until you’ve formed all the laddus.
  3. Garnish each laddu with the remaining saffron flakes on top for an elegant touch.
