Indulge in the irresistible flavors of a Caramelized Apple Tart, a delightful dessert that highlights the sweetness and tenderness of caramelized apples. This tart, reminiscent of a tarte tatin, is best enjoyed when made almost at the last minute, allowing the caramelized apples to shine. Topped with Whipped Cream, Vanilla Ice Cream, or Vanilla Custard Sauce, it’s a perfect treat to savor after a meal. Additionally, variations like Caramelized Pineapple Tart and Caramelized Peach or Plum Tart offer delightful twists using different fruits.

MAKES: One 10-inch tart (about 8 servings)

TIME: About 1 hour

INGREDIENTS:

  • 6 Granny Smith or other tart, hard apples
  • Juice of 1/2 lemon
  • 8 tablespoons (1 stick) unsalted butter, cut into pieces
  • 3/4 cup sugar
  • 1 recipe Sweet Tart Crust, chilled but not rolled out

INSTRUCTIONS:

  1. Preheat the oven to 400°F (200°C).
  2. Peel, core, and quarter the apples. Toss them with lemon juice to prevent browning.
  3. Press the butter into the bottom and sides of a heavy ovenproof skillet, preferably cast-iron, measuring 10 inches in diameter.
  4. Sprinkle the butter with sugar. Press the apple quarters into the sugar, arranging them in concentric circles and ensuring they are tightly packed. Keep in mind that the apples will shrink during cooking.
  5. Place the skillet over medium-high heat and cook until the butter-sugar mixture turns a deep, dark brown. This process should take about 15 to 20 minutes. Meanwhile, roll out the Sweet Tart Crust just slightly larger than the skillet.
  6. Once the apples are caramelized, remove the skillet from the heat. Carefully place the rolled-out pastry on top of the apples, bringing the dough to the edges of the skillet to seal it. Prick the dough with a fork and bake in the preheated oven until the pastry turns golden brown, approximately 20 minutes.
  7. Remove the tart from the oven and let it sit for 5 minutes. Shake the hot skillet gently to loosen any apples stuck to the bottom. Invert the entire tart onto a large serving dish, taking caution to avoid burning yourself as the juices will be hot. Serve the tart immediately or at room temperature.

VARIATIONS:

  • Caramelized Pineapple Tart: Use fresh pineapple slices, roughly the same size as apple slices, as a substitute for the apples. Canned pineapple is not recommended for this variation.

  • Caramelized Peach or Plum Tart: Ideal for summertime when stone fruits are at their best, substitute slightly soft peaches or plums for the apples to create a delectable variation.

TIPS:

  • Select firm and tart apples, such as Granny Smith, for the best results in this recipe. Their acidity complements the sweetness of the caramel.
  • When caramelizing the apples, make sure to cook the butter-sugar mixture until it turns a deep, dark brown. This will give the tart a rich and intense caramel flavor.
  • Use caution when inverting the tart onto a serving dish, as the juices and caramel will be hot. Use oven mitts or kitchen towels to protect your hands.
  • Serve the tart warm for a comforting dessert or at room temperature for a more relaxed and casual presentation.
  • Accompany the Caramelized Apple Tart with a dollop of Whipped Cream, a scoop of Vanilla Ice Cream, or a drizzle of Vanilla Custard Sauce to enhance the flavors and provide a creamy contrast.
  • For the Caramelized Pineapple Tart variation, make sure to use fresh pineapple slices rather than canned ones to maintain the desired texture and taste.
  • When making the Caramelized Peach or Plum Tart, select slightly soft and ripe fruits for the best flavor and texture.
  • To add a touch of elegance to the presentation, consider garnishing the tart with a sprinkle of powdered sugar, a sprig of fresh mint, or a drizzle of caramel sauce.
  • Leftovers can be stored in the refrigerator for a few days. To reheat, place individual slices in the oven at a low temperature until warmed through.
