Yield: 4 servings

Prep Time: 20 minutes

Cooking Time: meat 10–12 minutes, peppers 10–12 minutes

Total Time: 40–44 minutes

INGREDIENTS:

  • ¼ pound lean ground pork
  • ¾ pound lean ground beef
  • ¼ cup onion, minced
  • 1 15-ounce can Red Gold crushed tomatoes
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon barbeque seasoning
  • 1 teaspoon honey
  • ½ teaspoon dried basil
  • ½ cup cooked brown rice
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon salt
  • 2 small bell peppers

INSTRUCTIONS:

  1. Begin by placing the lean ground pork, lean ground beef, and minced onion in the air fryer baking pan. Cook at 360°F (182°C) for 5 minutes.
  2. Stir the mixture to break apart any chunks and cook for an additional 3 minutes. Continue cooking and stirring in 2-minute intervals until the meat is thoroughly cooked and well done. Once done, remove the cooked meat mixture from the pan and drain any excess liquid.
  3. In a small saucepan, combine the Red Gold crushed tomatoes, Worcestershire sauce, barbeque seasoning, honey, and dried basil. Stir well to ensure that the honey and seasonings are well mixed into the sauce.
  4. In a large bowl, combine the cooked meat mixture, cooked brown rice, garlic powder, oregano, and salt. Add ¼ cup of the seasoned crushed tomatoes from the saucepan. Stir the mixture until all the ingredients are well combined.
  5. Cut the small bell peppers in half and remove their stems and seeds.
  6. Stuff each bell pepper half with one-fourth of the meat and rice mixture, ensuring each pepper is generously filled.
  7. Place the stuffed bell peppers in the air fryer basket and cook for 10 to 12 minutes. This cooking time will render the peppers crisp-tender and perfectly cooked.
  8. As the stuffed bell peppers cook, heat the remaining seasoned tomato sauce in a separate container.
  9. Once the peppers are done, serve them with the warm tomato sauce spooned over the top for a delectable finish.

TIP:

  • For an added layer of flavor, McCormick Grill Mates Smokehouse Maple seasoning is highly recommended for this recipe. Its smoky and maple-infused notes can elevate the taste profile of the Stuffed Bell Peppers, enhancing the overall culinary experience.
