INGREDIENTS:

  • 2½ cups flour
  • 2 teaspoons baking soda
  • 1½ teaspoons salt
  • 2 cups crushed bran cereal
  • ½ cup chopped dried apple
  • ½ cup dried cherries
  • 1 cup boiling water
  • ½ cup softened unsalted butter
  • 1 cup sugar
  • ½ cup honey
  • 2 large eggs
  • 2 cups buttermilk
  • ½ cup walnut pieces

 

INSTRUCTIONS:

  1. Preheat the oven to 400°F and line a muffin tin with baking cups.
  2. In a small bowl, stir together the flour, baking soda, and salt.
  3. In another bowl, combine the crushed bran cereal and dried fruit with the boiling water. Let it sit for a few minutes to soften.
  4. In a large bowl, beat the softened butter until creamy. Gradually beat in the sugar, honey, and eggs.
  5. Add the buttermilk to the butter mixture and beat until well combined.
  6. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  7. Stir in the bran mixture and walnut pieces until evenly distributed throughout the batter.
  8. Divide the batter into the lined muffin tins, filling each cup about ¾ full.
  9. Bake the muffins in the preheated oven for approximately 20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
