INSTRUCTIONS

  1. Prepare the Greens:
    • Wash the lettuce thoroughly, removing any dirt or debris. Shred the lettuce into thin strips.
  2. Slice the Spring Onions:
    • Trim and slice the spring onions thinly, using both the white and green parts.
  3. Sauté the Greens and Onions:
    • In a large saucepan, melt the Crisco (or vegetable shortening) over medium heat.
    • Add the shredded lettuce and sliced spring onions to the saucepan.
    • Sauté them for about 5 minutes until they become tender and slightly translucent.
  4. Add Stock and Milk:
    • Pour in the stock (or water) and part of the milk into the saucepan with the sautéed greens and onions.
    • Allow the mixture to simmer gently for approximately 10 minutes. This helps infuse the flavors of the greens into the liquid.
  5. Prepare Cornstarch Mixture:
    • In a separate bowl, mix the cornstarch with the remainder of the milk until it forms a smooth paste.
  6. Thicken the Soup:
    • Gradually pour the cornstarch and milk mixture into the soup, stirring continuously.
    • Continue stirring until the soup comes to a boil and thickens. Simmer for another 10 minutes.
  7. Season the Soup:
    • Season the soup with salt, a pinch of nutmeg, and a touch of sugar to taste. Adjust the seasonings according to your preference.
  8. Prepare Croutons and Garnish:
    • Cut some crusts of bread into thin strips and toast them in the oven until they are crisp. These will be used as croutons.
    • Chop parsley finely for garnishing.
  9. Serve the Soup:
    • Place the crisp croutons in a serving tureen.
    • Sprinkle chopped parsley over the croutons.
    • Pour the hot spring soup over the croutons and garnish.
