INGREDIENTS

  • 6 jalapenos, stems and seeds removed, chopped
  • 6 tomatoes, skins and seeds removed, chopped
  • 1 teaspoon salt
  • 1/2 white onion, chopped
  • 1/2 cup cilantro, chopped
  • 2 cloves garlic, chopped
  • 1 red pepper, roasted, skin and seeds removed, and chopped fine
  • 1 green pepper, roasted, skin and seeds removed, and chopped fine
  • 1 cucumber, skinned and seeds removed, then chopped fine

 

INSTRUCTIONS

  1. Begin by preparing the jalapenos. Remove the stems and seeds, then chop them into pieces.
  2. For the tomatoes, peel off the skins and remove the seeds. Chop the tomatoes into small pieces.
  3. Season the chopped jalapenos and tomatoes with salt to taste.
  4. Add the chopped white onion, cilantro, and chopped garlic to the mixture.
  5. Roast the red and green peppers until their skin is charred and blistered. Once roasted, remove the skin and seeds, then chop them finely.
  6. Skim and remove the skin and seeds from the cucumber, then chop it finely as well.
  7. Combine all the prepared ingredients in a large mixing bowl.
  8. In a separate container, mix together 10 ounces each of tequila and white wine vinegar with 2 teaspoons of white sugar until the sugar is completely dissolved.
  9. Toss the tequila-vinegar mixture into the vegetable garnish and mix everything well.
  10. Place the salsa in an airtight container and let it sit overnight before using. This resting period allows the flavors to meld together and develop a harmonious taste.
