INGREDIENTS:

  • 3 big handfuls of sorrel (or substitute spinach seasoned with lemon juice)
  • 2 tbsp extra virgin olive oil
  • 1 onion, chopped
  • 14oz (400g) potatoes, peeled and diced
  • 1 bay leaf
  • 2 sprigs of parsley
  • 2 sprigs of thyme
  • 1½ quarts (1½ liters) chicken or vegetable stock
  • Salt and freshly ground black pepper
  • 6 tbsp heavy cream (optional) or 3 tbsp Greek yogurt

 

INSTRUCTIONS:

  1. Begin by removing and discarding the larger, tougher stems of the sorrel leaves. Coarsely shred the sorrel leaves. In a large saucepan, warm the olive oil and add the chopped onion, diced potatoes, bay leaf, parsley, and thyme, all tied together with string to create a bouquet garni. Stir to coat the ingredients with the oil, then cover the saucepan and let them cook over low heat for about 10 minutes.
  2. Remove the cover and pour in the chicken or vegetable stock. Season with salt and freshly ground black pepper. Bring the mixture to a boil and then let it simmer for approximately 15 minutes, until the potatoes are very tender. Once done, remove the saucepan from heat, take out the bouquet garni, and stir in the shredded sorrel leaves.
  3. Process the soup in batches using a blender until smooth. Return the blended soup to the pan. Reheat the soup gently and stir in the heavy cream, if using. Taste the soup and adjust the seasoning according to your preferences.
  4. Alternatively, if the weather is warm, you can chill the soup for a few hours in the refrigerator. To serve, ladle the chilled soup into bowls and add a teaspoonful of Greek yogurt to each bowl as a delightful garnish.
