INGREDIENTS:

  • 700g/11 1/2lb plain flour
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 2 teaspoons baking powder
  • 2 teaspoons active dry yeast
  • 2 tablespoons softened butter, plus a little extra, melted
  • 225ml/8fl oz warm milk

PREPARATIONS:

  1. Prepare the dough: In a large bowl, combine about 125g/4oz of the flour with the sugar, salt, baking powder, yeast, and 2 tablespoons of softened butter. Mix until smooth and the yeast starts to froth.
  2. Add the remaining flour: Sift in the remaining flour and continue mixing until a stiff dough forms. Transfer the dough onto a lightly floured surface and knead until it becomes smooth and elastic. Shape the dough into a ball and allow it to rise in a warm place until it doubles in size.
  3. Shape the pretzels: Once the dough has risen, punch it down and knead it for a minute. Divide the dough into eight equal pieces. Roll or cut each piece into a rope about 45cm/18in long and 1cm/1/2in in diameter. Twist each rope into a pretzel shape and let them rest for a couple of minutes.
  4. Boil and bake the pretzels: While shaping the pretzels, bring a large pot of water to a boil. Using a slotted spoon or broad spatula, carefully slide the pretzels into the boiling water one at a time. Boil each pretzel until it floats to the top, then remove it immediately and transfer it to a lightly greased baking sheet.
  5. Bake and serve: Preheat the oven to 200°C/400°F/Gas mark 6. Place the baking sheet with the pretzels in the oven and bake for approximately 15 minutes or until they turn golden brown. As the pretzels come out of the oven, lightly brush them with melted butter. Serve the soft pretzels warm and enjoy their delectable flavor and texture.

YIELD: This recipe yields 8 servings of delightful soft pretzels.

SPECIAL INSTRUCTIONS:

  • For added flavor, you can sprinkle coarse salt, sesame seeds, or grated cheese on top of the pretzels before baking.
  • Feel free to experiment with different seasonings and dips to accompany the pretzels, such as cinnamon sugar, garlic butter, or mustard.

TIPS:

  • To ensure a soft and fluffy interior, make sure the water is boiling before adding the pretzels. This will help create the signature texture of a pretzel.
  • Serve the pretzels fresh from the oven for the best taste and texture. They can be enjoyed on their own or served with mustard, cheese sauce, or your favorite dip.
