  3. There are two options for shaping the dough, but both require chilling. For shaped cookies, form the dough into a rough ball or disk, wrap it in plastic, and freeze or refrigerate for at least 30 minutes until it becomes firm. Roll out the chilled dough on a lightly floured surface until it’s approximately 1/4 inch thick. Cut out the desired shapes using cookie cutters, then place the cookies on an ungreased baking sheet. As shortbread cookies don’t spread much, you can arrange them quite close together. Chill the shaped cookies for 1 hour or freeze them for longer periods. Once frozen, you can transfer them from the baking sheet to a plastic bag for storage.
  4. Alternatively, shape the dough into a round, triangular, or rectangular log. Refrigerate or freeze the log until it becomes firm, which takes about 30 minutes. You can store the log in the freezer if desired. Slice the chilled log into 1/4 inch thick rounds and place them on the baking sheet.
  5. Preheat the oven to 275°F (135°C). Bake the cookies until they are just firm but still tender and without any browning, which typically takes around 30 minutes. Allow the cookies to cool for a minute on the baking sheets before using a spatula to transfer them to a wire rack to finish cooling. For storage, place the cookies on a plate, uncovered, for up to a day.
