Falooda is a beloved Indian dessert that has captured the hearts and taste buds of people across the country, particularly in Mumbai where it originated. This delightful concoction serves as a refreshing drink-dessert, making it the perfect antidote to scorching summer days. Hailing from North India, Falooda is a milk-based dessert that combines the richness of sweetened milk with layers of malai or creams. Its exquisite flavors are enhanced with aromatic spices like cardamom and cinnamon, along with the delightful crunch of dried fruits such as almonds and walnuts. In Hindi, this variant of Falooda is known as “Lachha Rabri.” Although the preparation may seem straightforward, it does require some time and patience as milk is slow-cooked to achieve the desired semi-thick consistency.

Cooking Time: 30 minutes

Serving Size: 2

INGREDIENTS:

  • ½ cup falooda sev
  • 5 sliced almonds
  • 50 grams sugar
  • 4 tablespoons rose syrup
  • 5 sliced pistachios
  • 2 sliced cherries
  • 2 cups milk
  • 1 teaspoon falooda seeds
  • 4 tablespoons strawberry jelly

INSTRUCTIONS:

  1. In a heavy pan over medium heat, bring the milk to a boil. Stir occasionally to prevent it from sticking to the bottom of the pan. Allow it to simmer until it reaches a semi-thick consistency. This process usually takes around 30 minutes.
  2. While the milk is simmering, thoroughly mix the rose syrup into it. This will infuse the milk with a delightful floral aroma and flavor.
  3. While the milk is simmering and the jelly is setting, break the strawberry jelly into small, bite-sized pieces.
  4. In a separate saucepan, bring water to a boil over medium-high heat. Once the water is boiling, add the falooda sev to it. Boil the sev until it softens, typically taking a few minutes. Then, drain and set it aside.
  5. Allow the falooda seeds to soak and swell in a small bowl of water. This step ensures that they become soft and gelatinous.
  6. Once the milk has achieved the desired semi-thick texture, remove it from the heat and let it cool.
  7. Assemble your serving cups and add a generous spoonful of rose syrup to each.
  8. Follow this with a layer of raspberry jelly and the softened falooda seeds.
  9. Now, add a layer of the boiled falooda sev.
  10. Gradually pour the cooled rose milk over the layers in each serving cup.
  11. To finish, drizzle some more rose syrup on top for an extra burst of flavor.
  12. Serve your Falooda right away to enjoy its refreshing taste and delightful textures.

TIPS FOR MAKING FALOODA:

  • Quality Matters: Use fresh and high-quality ingredients, especially when it comes to milk and dried fruits. This will greatly enhance the flavor and texture of your Falooda.
  • Consistent Boiling: When reducing the milk, keep a low flame to ensure a gradual thickening process. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
  • Balancing Sweetness: Adjust the sugar quantity to your taste. Some prefer a sweeter Falooda, while others enjoy a milder sweetness.
  • Creative Variations: Feel free to experiment with different flavors of jelly or syrups to create your unique Falooda combinations.
