The lean lamb, infused with fresh mint and parsley along with spices, has a near melt-in-the mouth texture when served with a drizzle of olive oil over the top.

INGREDIENTS:
- 1 lb (500 g) lean boneless leg of lamb, cut into small pieces
- 1 cup (50 g) finely chopped fresh parsley
- 4 tablespoons finely chopped fresh mint leaves
- 4 tablespoons finely chopped fresh coriander leaves (cilantro)
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon allspice
- 1 small onion, preferably Spanish, minced
- 2 green onions (scallions), trimmed and finely chopped, for garnish
- Extra-virgin olive oil, for drizzling on top
- Fresh mint leaves (optional)
INSTRUCTIONS:
- Place the lamb, parsley, mint, coriander, salt, black pepper, and allspice in a food processor. Process into a smooth paste.
- Transfer the lamb mixture to a mixing bowl and thoroughly mix in the minced onion.
- Spread the mixture evenly on a platter.
- Sprinkle the chopped green onion over the lamb mixture.
- Drizzle with extra-virgin olive oil.
- Serve immediately, optionally garnished with fresh mint leaves.
- This dish pairs well with Pita Bread, Crunchy Pickled Garlic, or any other type of pickle.
- When serving lamb tartare with small pieces of Pita Bread, place a fresh mint leaf on the tartare before placing it in the mouth.
