FOR GRILLED DISHES

Sauce Diable, a classic French sauce with a name that translates to “Devil’s Sauce,” is a flavorful and zesty accompaniment that adds a fiery kick to grilled dishes. This sauce is renowned for its bold blend of ingredients that tantalize the palate and infuse grilled meats, especially chicken, with a burst of robust flavors.

Sauce Diable is characterized by its spirited combination of ingredients that create a harmonious balance of heat and depth. A base of shallots, white wine, and vinegar forms the foundation of the sauce, infusing it with a delicate tang. The addition of Dijon mustard introduces a unique sharpness, while the fiery heat comes from cayenne pepper or hot sauce.

Creating Sauce Diable involves simmering the ingredients to reduce and intensify their flavors, resulting in a rich and velvety sauce. Once reduced, the sauce is strained to remove any solids, leaving behind a smooth and luxurious texture. This process also ensures that the sauce maintains its refined appearance, perfect for drizzling over grilled chicken.

MAKES: ABOUT 1 CUP

INGREDIENTS:

  • 1 cup dry white wine
  • 1 tablespoon white wine vinegar
  • 1 tablespoon minced shallot
  • ½ teaspoon crumbled dried thyme
  • ½ bay leaf
  • 2 pinches freshly ground black pepper
  • ½ cup demi-glace
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon unsalted butter
  • 2 teaspoons minced fresh parsley
  • ¼ teaspoon ground cayenne

INSTRUCTIONS:

  1. Combine Aromatic Ingredients: In a small saucepan, combine the dry white wine, white wine vinegar, minced shallot, crumbled dried thyme, bay leaf, and freshly ground black pepper.
  2. Boil and Reduce: Place the saucepan over medium-high heat and bring the mixture to a boil. Allow the liquid to reduce by approximately half, which usually takes around 5 to 10 minutes. This reduction process intensifies the flavors of the ingredients.
  3. Strain the Mixture: Once the mixture has reduced, strain it to remove the solids. Discard the strained solids and retain the flavorful liquid.
  4. Add Demi-Glace and Worcestershire Sauce: Return the strained liquid to the saucepan and stir in the demi-glace and Worcestershire sauce. Gently bring the mixture back to a simmer, ensuring the ingredients are well combined.
  5. Whisk in Butter: Remove the saucepan from the heat and immediately whisk in the unsalted butter. Whisk until the butter is fully incorporated into the sauce, creating a smooth and velvety texture.
  6. Final Touches: Once the butter is well incorporated, add the minced fresh parsley and a touch of ground cayenne for a subtle hint of heat. These final ingredients contribute to the sauce’s depth of flavor.
  7. Serve: This warm and flavorful sauce is now ready to be served. Spoon it over grilled chicken, allowing the flavors to meld harmoniously. The sauce can also be served alongside the chicken for dipping or drizzling.
