  • Green Plantains (for making dumplings) – 2, peeled and mashed
  • Onion – 1 large, finely chopped
  • Garlic – 4 cloves, minced
  • Green Bell Pepper – 1, chopped
  • Red Bell Pepper – 1, chopped
  • Cilantro – 1/2 cup, chopped
  • Oregano – 1 tablespoon, dried
  • Salt – 2 teaspoons (or to taste)
  • Black Pepper – 1 teaspoon (or to taste)
  • Water – 12 cups
  • Olive Oil – 2 tablespoons
  • Lime or lemon wedges (for garnish, optional)

 

INSTRUCTIONS

Preparing the Sancocho:
