  • 2 tablespoons minced garlic
  • 2 tablespoons minced fresh sage leaves or 2 teaspoons dried sage
  • Salt and freshly ground black pepper
  • About 2 pounds potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons extra virgin olive oil, plus more as needed
  • One 3- to 4-pound pork loin roast, bone in, one 2- to 3-pound boneless roast, or a similar-sized portion of fresh ham

 

INSTRUCTIONS:

  1. Preheat the oven to 425°F. Create a flavorful mixture by combining minced garlic, minced fresh sage leaves (or dried sage), salt, and freshly ground black pepper.
  2. In a roasting pan large enough to hold the pork, place the peeled and cubed potatoes. Toss the potatoes with a couple of tablespoons of olive oil and about 1 teaspoon of the garlic-sage mixture.
  3. Using a thin-bladed knife and your fingers, make slits all over the pork and insert most of the remaining garlic-sage mixture into these slits. Spread the rest of the mixture all over the outside of the roast and nestle it among the potatoes. Drizzle a little more olive oil over the meat and place the roasting pan in the oven.
  4. Roast the pork, undisturbed, for 30 minutes at 425°F. After this time, remove the roasting pan from the oven, stir the potatoes (you might need to scrape some off the bottom of the pan), and baste the pork with a little of the pan juices. Lower the oven temperature to 325°F and continue to cook the pork, stirring the potatoes every 15 minutes or so.
  5. After a total cooking time of about 11/4 hours or more, begin to check the meat with an instant-read thermometer. When the temperature registers 145–150°F, transfer the pork to a warm platter to rest.
  6. While the meat rests for 10 to 15 minutes, turn the oven heat up to 450°F to ensure the potatoes are done and crispy. If they need a bit of browning, run them under the broiler; if they’re perfectly done, you can keep the oven at 325°F.
  7. Carve the rested pork and serve it alongside the flavorful roasted potatoes, showcasing the delightful combination of garlic, sage, and tender meat.
