INSTRUCTIONS

1. Rinse and Drain the Rice:

  • Drain the rinsed rice thoroughly.

2. Cook the Rice:

3. Prepare the Egg Mixture:

  • While the rice is cooking, whisk the eggs in a separate bowl until they are well beaten.
  • Gradually add a ladleful of the hot rice mixture to the beaten eggs, whisking continuously. This process, called tempering, prevents the eggs from curdling when added to the hot pudding.

4. Combine the Egg Mixture:

  • Slowly pour the tempered egg mixture back into the rice pudding, stirring constantly. This step thickens the pudding and gives it a rich, custard-like consistency.
  • Continue to cook the pudding over low heat, stirring constantly, for an additional 2-3 minutes. Be careful not to let it come to a boil to avoid curdling.

5. Add Vanilla and Raisins (Optional):
