INGREDIENTS:

  • 4 red peppers
  • 4 tomatoes
  • 50ml/2fl oz vegetable oil
  • 1⁄2 teaspoon dried marjoram
  • 1⁄2 teaspoon dried mixed herbs
  • 2 garlic cloves, crushed
  • 1 teaspoon mild curry paste
  • 1 red onion, sliced
  • 1 leek, white part only, sliced
  • 1 teaspoon sweet chili sauce
  • Salt and freshly ground black pepper

PREPARATION:

  1. Preheat the grill. Cut the red peppers into quarters, remove the seeds and membrane, and place them under the grill. Grill until the skin blackens and blisters. Once done, transfer the grilled peppers to a cutting board, cover with a tea towel, and allow them to cool. Once cooled, remove and discard the skin.
  2. Mark a small cross on the top of each tomato. Place the tomatoes in a bowl and cover with boiling water for approximately 2 minutes. Drain and allow them to cool. Once cooled, remove the skin, halve the tomatoes, and remove the seeds.
  3. Heat the vegetable oil in a large, heavy pan over low heat. Add the dried marjoram, dried mixed herbs, crushed garlic cloves, and mild curry paste. Stir for 1 minute until aromatic. Then, add the sliced red onion and leek, and cook for an additional 3 minutes.
  4. Add the grilled peppers, tomatoes, cabbage, and 1.2 liters/2pt of water to the pan. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
  5. Allow the soup to cool slightly, then transfer it to a blender or food processor. Purée the soup for approximately 30 seconds or until smooth.
  6. Return the puréed soup to the pan and gently reheat it. Stir in the sweet chili sauce, and season with salt and freshly ground black pepper.
  7. Serve the Red Pepper Soup hot, garnished with a sprinkling of fresh herbs, such as chopped parsley or basil, if desired.
