FOR CONTEMPORARY SMOKED FOOD & GRILLED DISHES

Adding sugar to fruit destined for the grill or smoker helps caramelize the natural sugars. As with vegetables, it’s a good idea to give fruit a spritz of oil before cooking, to prevent it from sticking to the cooking grate and also to ensure that a dry spice mixture will adhere. We especially like this rub on grilled watermelon, cantaloupe, and apple slices served for dessert.

Coarse-ground red maple sugar is a distinctive and flavorful sweetener derived from the sap of sugar maple trees. This unique sugar variety is distinct from traditional white granulated sugar, as it retains some of the natural color and flavor nuances present in the sap of the maple tree. The process of producing red maple sugar involves tapping sugar maple trees, collecting the sap, and then concentrating it through evaporation to create the crystalline sugar.

Red maple sugar boasts a rich, caramel-like flavor profile with hints of toffee and a subtle woodsy undertone. The coarse texture of the sugar lends a pleasant crunch and added visual appeal when used as a topping or seasoning. Its distinct flavor makes it a popular choice for enhancing both sweet and savory dishes.

In culinary applications, red maple sugar can be utilized as a versatile ingredient. It can be used in baking to add a unique depth of flavor to cakes, cookies, muffins, and other treats. Additionally, it can serve as a flavorful sweetener for beverages like coffee, tea, and cocktails, imparting a touch of maple richness.

When used as a rub, like in the “Maple-Chile Fruit Rub” recipe, red maple sugar enhances dishes with its delightful sweetness and adds complexity when paired with complementary spices and seasonings. This natural sweetener is often favored for its distinct character, as it embodies the essence of the sugar maple tree itself. It’s worth noting that red maple sugar is not as widely available as traditional sugars, but it can often be found in specialty stores or online retailers that focus on high-quality and unique ingredients.
