INGREDIENTS:

  • 100g/4oz basmati rice
  • 2 tablespoons groundnut oil
  • 1 small red onion, chopped
  • 1 red pepper, chopped
  • 225g/8oz cherry tomatoes, halved
  • 2 eggs, beaten
  • Salt and freshly ground black pepper

 

PREPARATIONS:

  1. Rinse the basmati rice under cold running water in a colander and drain well.
  2. Bring a large saucepan of lightly salted water to a boil. Add the rice and cook for 10-12 minutes or until tender. Drain the cooked rice thoroughly.
  3. Heat the groundnut oil in a wok over high heat until very hot.
  4. Add the chopped red onion and red pepper to the hot wok and stir-fry for 2-3 minutes until they start to soften.
  5. Add the halved cherry tomatoes to the wok and stir-fry for an additional 2 minutes.
  6. Pour in the beaten eggs and let them cook undisturbed for 30 seconds to set slightly. Then, stir to break up the egg and incorporate it into the vegetables.
  7. Add the drained cooked rice to the wok and toss it with the vegetable and egg mixture over the heat for 3 minutes, ensuring the rice is evenly coated and heated through.
  8. Season the red fried rice with salt and freshly ground black pepper to taste.
