No oranges? No problem. Substitute an equal amount of commercial orange juice for the fresh squeezed.

INGREDIENTS: YIELD: 1 QUART

  • 4 cups raspberries
  • 3 tablespoons orange juice
  • 1 cup sugar
  • 1 cup Greek yogurt
  • 1 teaspoon vanilla extract

 

INSTRUCTIONS:

  1. In a small bowl, combine the raspberries, orange juice, and sugar. Stir and allow to macerate at room temperature for 1–2 hours.
  2. After raspberries are ready, place all ingredients in a blender or food processor, and blend until smooth.
  3. Add to ice cream maker and follow manufacturer’s instructions for freezing.

 

Mix It Up:

  • There are numerous varieties of raspberries, and any would be delicious here. Try golden raspberries for an unusual look, or black, red, or even white. All will be superb.
