No oranges? No problem. Substitute an equal amount of commercial orange juice for the fresh squeezed.
INGREDIENTS: YIELD: 1 QUART
- 4 cups raspberries
- 3 tablespoons orange juice
- 1 cup sugar
- 1 cup Greek yogurt
- 1 teaspoon vanilla extract
INSTRUCTIONS:
- In a small bowl, combine the raspberries, orange juice, and sugar. Stir and allow to macerate at room temperature for 1–2 hours.
- After raspberries are ready, place all ingredients in a blender or food processor, and blend until smooth.
- Add to ice cream maker and follow manufacturer’s instructions for freezing.
Mix It Up:
- There are numerous varieties of raspberries, and any would be delicious here. Try golden raspberries for an unusual look, or black, red, or even white. All will be superb.
