DIRECTIONS:

  1. Preheat the broiler and place an all-stainless steel skillet or cast iron pan under the heat for about 10 minutes to get it very hot. Ensure that the pan’s handle is also stainless steel.
  2. Rub the salmon with 2 tsp of fresh lemon juice, salt, and pepper. You can broil the salmon with the skin on, but it may take a minute or two longer. The skin will peel right off after cooking.
  3. Using a hot pad, pull the pan away from the heat and place the salmon on the hot pan, skin side down. Return it to the broiler. Keep in mind that the salmon cooks rapidly on both sides, so it will be done quickly, usually in about 7 minutes depending on thickness. Test with a fork to check for doneness; it should easily flake when cooked. Salmon is best when it is still pink inside.
  4. While the salmon is cooking, combine all the salsa ingredients in a bowl.
  5. When the salmon is ready, spoon the salsa over it.
