MAKES: ABOUT 1½ CUPS

 

INGREDIENTS:

  • 1 tablespoon sesame oil (not the toasted Asian variety) or almond oil
  • 1 tablespoon peanut oil
  • 1 tablespoon minced onion
  • ¼ cup unsweetened cocoa powder, such as Ghirardelli or Green & Black’s
  • 1 tablespoon ground dried ancho chile
  • 1 tablespoon ground dried pasilla chile
  • 1½ cups chicken stock
  • Minced zest and juice of 1 medium orange

 

INSTRUCTIONS:

  1. Warm the sesame and peanut oils together in a saucepan over medium heat. Stir in the minced onion and cook until soft and translucent, which takes around 5 minutes.
  2. Add the cocoa powder and both ground dried ancho and pasilla chiles to the pan. Cook for an additional 1 minute, stirring to combine the flavors.
  3. Pour in the chicken stock and add the minced zest and juice of the orange. Bring the mixture just to a boil, then reduce the heat to medium-low. Allow the mole to simmer until it’s reduced by about one-third, approximately 20 minutes.
  4. Serve the Quick Black Mole warm or chilled at the table, allowing its rich flavors to take center stage. This versatile sauce can be refrigerated in a covered container and enjoyed over the course of several days.
