Pumpkin pie is a classic dessert that is synonymous with fall and Thanksgiving. This recipe offers a delicious take on the traditional pumpkin pie by creating a custard-like filling loaded with warm spices and the unmistakable flavor of pumpkin. Precooking the crust and filling ensures a crispy bottom crust and a perfectly set filling. If desired, you can even use alternative ingredients like winter squash, sweet potatoes, or white beans in place of pumpkin. The pie can be enjoyed on its own or elevated with a dollop of flavored Whipped Cream.

MAKES: One 9-inch pie (about 8 servings)

TIME: About 11 ½ hours

INGREDIENTS:

  • Flaky Piecrust, fitted into a 9-inch pie pan and chilled
  • 3 eggs
  • ¾ cup sugar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon freshly grated nutmeg
  • ½ teaspoon ground ginger
  • Pinch ground cloves
  • Pinch salt
  • 2 cups canned or fresh pumpkin purée
  • 2 cups half-and-half, cream, or whole milk

INSTRUCTIONS:

  1. Prebake the crust while preparing the filling. Once the crust is done, preheat the oven to 375°F.
  2. In a mixing bowl, beat the eggs with the sugar until well combined. Add the ground cinnamon, freshly grated nutmeg, ground ginger, cloves, and salt. Stir in the pumpkin purée, followed by the half-and-half (or your choice of cream or whole milk).
  3. While the crust is baking, warm the pumpkin mixture in a medium saucepan over medium-low heat. Stir occasionally until the mixture is hot to the touch, being careful not to let it boil.
  4. Place the pie plate on a baking sheet. Pour the pumpkin mixture into the prebaked crust. Bake the pie for 30 to 40 minutes, or until the filling shakes like Jell-O but is still moist. Remove from the oven and allow it to cool on a rack. The pie can be served warm or at room temperature.

VARIATIONS:

Sweet Potato Pie: For a twist on the classic, substitute the pumpkin with puréed sweet potato. Add 2 teaspoons of grated or finely minced orange zest to enhance the flavor.

Pumpkin Pie with Gingersnap Crust: Instead of using the Flaky Piecrust, prepare and prebake a Gingersnap Crust to add a deliciously spicy and crunchy element to your pie.

Pumpkin-Tofu Pie: For a vegan or dairy-free option, replace the eggs and half-and-half with soft tofu. Substitute a pound of silken or other soft tofu for the eggs and half-and-half. Drain the tofu, purée it with the other ingredients, pour it into the crust, and proceed with the rest of the recipe.

TIPS:

  • Opt for canned pumpkin purée or make your own using fresh pumpkin. Look for pure pumpkin without added spices or sweeteners for the best flavor and texture.
  • Prebaking the crust helps prevent it from becoming soggy. Follow the instructions provided in the recipe or refer to the specific page mentioned for prebaking the pie crust.
  • When heating the pumpkin mixture on the stovetop, make sure to do so over medium-low heat and stir occasionally. Avoid boiling the mixture, as it may affect the texture of the filling.
  • Keep a close eye on the pie while it bakes. The filling should jiggle like Jell-O when gently shaken but still be moist. Overbaking can lead to a dry pie, so it’s better to slightly underbake it if unsure.
  • After removing the pie from the oven, let it cool on a rack before serving or refrigerating. Cooling allows the filling to set and enhances the flavor.
  • Feel free to add your personal touch to the pie by adjusting the spices. You can increase or decrease the amounts of cinnamon, nutmeg, ginger, and cloves to suit your taste preferences.
  • If you want to explore different flavors, consider using alternatives to pumpkin. Sweet potato or various winter squashes can be substituted for a unique twist on the classic pie.
  • Elevate the taste of your pumpkin pie by serving it with flavored whipped cream. Add a hint of cinnamon, nutmeg, or ginger to the whipped cream for a delightful pairing.
  • Store leftover pumpkin pie in the refrigerator in an airtight container. It can be enjoyed chilled or brought to room temperature before serving, depending on your preference.

Enjoy the warm spices, creamy texture, and comforting flavors of this pumpkin pie. Whether you stick with the classic recipe or explore the variations, this dessert is sure to delight your taste buds and bring a sense of coziness to your table.
