INGREDIENTS:

  • 16 ounces firm tofu, drained and mashed
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon turmeric
  • 2 tablespoons olive oil
  • ½ cup onion, diced
  • 1 clove garlic, minced
  • 8 corn tortillas
  • 1 cup vegetarian refried beans, warmed
  • ½ cup cheese or vegan cheese
  • ½ cup chipotle salsa

 

INSTRUCTIONS:

  1. Preheat your oven to 350°F (175°C). In a large bowl, mash the firm tofu with your hands or a fork. Stir in the fresh lemon juice, salt, black pepper, and turmeric to season the tofu mixture.
  2. In your pressure cooker, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3 minutes until it becomes translucent. Add the minced garlic and sauté for an additional 30 seconds.
  3. Pour the seasoned tofu mixture into the pressure cooker with the sautéed onions and garlic. Stir everything together and lock the lid securely in place. Bring the pressure cooker to medium pressure and maintain it for 6 minutes. Afterward, remove the cooker from heat and allow the pressure to release naturally.
  4. While the tofu mixture is cooking, heat 1 tablespoon of olive oil in a small sauté pan over medium heat. Cook the corn tortillas one at a time until they start to brown on each side. Set them aside.
  5. Place all 8 of the tortillas on one or two baking sheets. Divide the warmed refried beans evenly among the tortillas, spreading them as a base.
  6. Once the tofu mixture is done, spoon it over the refried beans on each tortilla.
  7. Sprinkle cheese (or vegan cheese) over each of the tortillas generously.
  8. Bake the assembled tortillas in the preheated oven until the cheese begins to melt.
  9. Remove from the oven and top each tortilla with a spoonful of chipotle salsa before serving.
