Popovers are delightful and versatile baked goods that make a perfect addition to any meal. These airy, puffed pastries are incredibly easy to make and can be enjoyed fresh out of the oven or even as leftovers. While they pair wonderfully with scrambled eggs, they are traditionally served alongside a flavorful Prime Rib Roast. With a total time of about 45 minutes, including baking, you can quickly whip up a batch of these delicious treats. Get ready to indulge in the light and crispy texture of homemade popovers!

MAKES: 12 popovers

TIME: About 45 minutes

INGREDIENTS:

  • 1 tablespoon melted butter or neutral oil (e.g., grapeseed or corn), plus some for the muffin tin
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour

INSTRUCTIONS:

  1. Heat the oven to 425°F (220°C).
  2. Grease a 12-cup muffin tin or a popover tin with butter or oil and place it in the preheated oven while you prepare the batter.
  3. In a mixing bowl, beat together the eggs, milk, melted butter or oil, sugar, and salt until well combined.
  4. Gradually add the flour to the mixture, beating it in a little at a time. Continue until the batter is smooth and free of lumps.
  5. Remove the preheated muffin tin from the oven and fill each cup at least halfway with the batter. If your tin is larger, you may end up with fewer than 12 popovers.
  6. Place the filled muffin tin back into the oven and bake at 425°F (220°C) for 15 minutes.
  7. After 15 minutes, reduce the oven temperature to 350°F (180°C) and continue baking for an additional 15 minutes or until the popovers are beautifully puffed and golden brown.
  8. Avoid opening the oven to check on the popovers until they have baked for a total of 30 minutes to ensure proper rising.
  9. Once fully baked, remove the popovers from the tin immediately to prevent them from becoming soggy. Serve them hot and enjoy their delightful texture and flavor.

TIPS:

  • It’s important to preheat both the oven and the muffin tin before pouring in the batter. This helps ensure that the popovers rise properly and develop a crispy exterior.
  • Make sure to grease the muffin tin generously with melted butter or oil to prevent the popovers from sticking. This also helps create a nice, golden crust.
  • For best results, use room temperature eggs and milk. Cold ingredients straight from the refrigerator can prevent the popovers from rising properly.
  • When adding the flour to the wet ingredients, mix until just combined. Overmixing can develop gluten and result in denser popovers.
  • Fill each muffin cup at least halfway with the batter to allow enough space for the popovers to rise and expand. However, be cautious not to overfill, as this can cause them to overflow.
  • It’s crucial to resist the temptation to open the oven door while the popovers are baking. Sudden changes in temperature can cause them to collapse. Only check on them after they have baked for a total of 30 minutes.
  • Popovers are best enjoyed immediately after baking while they are still hot and fresh. They tend to lose their crispness over time, so try to serve them as soon as they come out of the oven.
  • While the basic popover recipe is delicious on its own, you can also add variations to the batter. Consider incorporating herbs, spices, shredded cheese, or even diced ham to add a unique twist to your popovers.

These popovers are perfect for brunch, dinner parties, or any occasion that calls for a touch of elegance. Their crisp exteriors and hollow, tender centers make them a true delight to bite into. Whether you’re a fan of classic accompaniments like Prime Rib Roast or prefer them alongside scrambled eggs, these popovers are sure to impress. So grab your ingredients, preheat your oven, and get ready to enjoy a batch of freshly baked popovers that will leave everyone wanting more.
