INGREDIENTS:

  • 3 cups flour
  • 1 cup cornstarch
  • 3 tablespoons seasoned salt
  • 2 tablespoons paprika
  • 1 teaspoon baking soda
  • 1 (.7-ounce) package dry Italian salad dressing mix
  • 1 (1.25-ounce) package dry onion soup mix
  • 1 (1.37-ounce) package dry spaghetti sauce mix
  • 3 tablespoons sugar
  • 3 cups crushed corn flakes
  • 2 eggs
  • ¼ cup cold water
  • Oil, for frying
  • 4 pounds chicken, cut into bite-sized pieces

 

INSTRUCTIONS:

  1. In a large bowl, combine the flour, cornstarch, seasoned salt, paprika, baking soda, Italian dressing mix, onion soup mix, spaghetti sauce mix, and sugar.
  2. In another bowl, place the crushed corn flakes.
  3. In a third bowl, beat the eggs and mix in the cold water.
  4. In a heavy skillet, add enough oil to fill it 1″ deep and heat it over medium-high heat.
  5. Grease a 9″ × 12″ × 2″ baking pan and set it aside. Preheat the oven to 350°F.
  6. Dip each piece of chicken, one at a time, first into the dry coating mix, then into the egg and water mixture, and finally into the crushed corn flakes. Repeat the process by dipping the chicken back into the dry mix briefly.
  7. Fry the chicken pieces in the hot oil, skin-side-down, for about 3-4 minutes on medium-high heat. Turn the pieces and brown the other side. Be careful not to overcrowd the pan during frying.
  8. Once each piece is browned, place them in the prepared baking pan, skin-side up. Seal the pan with foil, leaving one side loose for steam to escape.
  9. Bake the chicken in the oven for 35-40 minutes. Then, remove the foil to check the tenderness of the chicken.
  10. Bake the chicken uncovered for an additional 5 minutes to crisp the coating.
