INGREDIENTS:

  • 12 corn tortillas (6- to 7-inch size)

Filling:

  • ½ cup refried pinto beans
  • ½ cup grated sharp Cheddar or Pepper Jack cheese
  • ¼ cup corn kernels (if frozen, measure after thawing and draining)
  • 2 tablespoons chopped green onion
  • 2 tablespoons chopped jalapeño pepper (seeds and ribs removed before chopping)
  • ½ teaspoon lime juice
  • ½ teaspoon chile powder, plus extra for dusting
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder

 

  • Oil for misting or cooking spray
  • Salsa, sour cream, or guacamole for dipping

 

INSTRUCTIONS:

  1. Start by mixing all the filling ingredients together in a bowl until well combined.
  2. For easier rolling, warm the corn tortillas if they are refrigerated. You can do this by wrapping them in damp paper towels and microwaving them for 30 to 60 seconds.
  3. Working with one tortilla at a time, place about 1 tablespoon of the prepared filling onto the tortilla and roll it up tightly.
  4. Spray the rolled taquito with oil or cooking spray and dust the outside with chile powder according to your taste preference.
  5. Arrange 6 taquitos in the air fryer basket, with 4 on the bottom layer and 2 stacked crosswise on top. Cook the taquitos at 390°F (199°C) for 6 to 8 minutes, or until they become crispy and browned.
  6. Repeat step 5 to cook the remaining taquitos in batches.
  7. Serve the Pinto Taquitos on their own or with your choice of dipping sauces such as salsa, sour cream, or guacamole.
